INGREDIENTS

13-1/3 lbs. McCain Reduced

Sodium Tater Tots®

20 lbs. Eggs - scrambled - precooked w/ bacon and cheese

1 lb 12 oz Monterey Jack Cheese blend

160 or 1 each tortilla whole wheat 6"

Directions

EGGS:

Preheat oven to 300F

TATER TOTS:

Preheat oven to 425F


EGGS:

Spray steamtable pan with nonstick spray.

Pour 5lb package of eggs into each steamtable pan. (Each pan should make 40 servings.)

Cook at 300F for 5 minutes. Remove from oven and stir. Place back in oven for another 5 minutes or until correct internal temperature is reached.

Sprinkle each pan with 7oz of cheese.

Place eggs in warmer until ready for service.

Place tortillas in warmer until ready for service.

TATER TOTS:

Place tater tots on a perforated sheet pan.

Cook for 18-22 minutes or until correct internal temperature is reached.

Offer #16 scoop eggs and 4 tots on each tortilla.

Assemble tacos on serving line.
